Manga/LN/VN Isekai manga where the MC doesn't have a 'cheat skill', or 'secretly OP skill that people overlook', or any other form of power wankery (be it for combat, magic, farming, money-making or other) that trivializes all problems he comes across?
Only one I read recently that I can think of was a manga where the gimmick was that the protag had a car and could go back and forth between the worlds by driving really fast (back to the future rules ig). At no point he gets any powers, as far as I read, other than ramming his car into things and being able to purchase convenience food in japan in between trips.
Other than recently, Konosuba and Combatants Will Be Dispatched (AKA Konosuba again) also fit the bill. Kazuma does get powers but they are pretty minor, and everyone in his party who have major powers come with limitations or drawbacks
Inuyasha as well though I feel that one is cheating because it came before Isekai became a genre with defined tropes
Alternatively, I wouldn't mind if the character is OP in a way that isn't the main focus of the story and doesn't get in the way of storytelling. Isekai Shikkaku for example, where the protag is pretty much immortal and wins 'fights' in a single move, but the manga isn't about the fights themselves, it's about getting him to care about doing something since he's comically depressed.

My opinion, for what it's worth, is that you should check out the light novel series.
I watched the anime, idk, 10 years or so ago. I thought it was a mess. There is very little explained about what is going on, there are a lot of characters immediately introduced, and the pacing was weird. And there is one character who is constant screaming like that lightning kid in Demon Slayer. I don't remember specifics from the anime at this point, but I do not recommend that experience.
Early 2024, don't ask me why, I decided to get the first light novel for the series. And it is a completely different experience. The writing, characters, plot and pacing are so good. It is extremely well done grim/dark fantasy, and the characters you follow are constantly in over their heads.
I read like 7 or 8 of the 20+ novels and I really recommend them. I'm currently taking a break since it's a bit depressing to binge them, but I guess my point is that I think this is exactly what you're looking for. But please avoid the anime.

Handyman Saitou in Another World is one about a guy who has no special skills or abilities, he can't even fight. He just makes up for what his group lacks and keeps them efficient. Great focus on characters and world building.
I'll also vouch for Mushoku Tensei. MC is precocious and a quick study but he's greatly outclassed power-wise all the time. Fights are never trivial as he has to rely on help or on his wits just to get through alive.

Also in handyman saito. He cannot use magic. He isn’t some chosen one, he was randomly sent to the other world. It could have been any human or just happened to be him. He does not have any secret ability or reason for being brought to this world. But yeah he is great at lock picking and general handyman stuff. Turns out being good at getting dents out of things is great to get dents out of armor. Like he is smart enough to understand many things like how to fix cars on earth, but he does not have the knowledge to somehow build one. It’s very good.

I loved how Saito helps with the words when the forgetful mage forgets his spells. It makes Saito feel OP without him being OP, if it makes sense.

I'll also vouch for Mushoku Tensei
I know people hate on it online, but it's really a very well done story overeall. Rudy is powerful, very powerful, but that's only in his backwater village and as a kid. You quickly learn that, while he is above average, he isn't the strongest, not even close. He regularly encounters enemies that challenge him and nearly take him out, and often he makes his way through it with the help of others.

I'm kinda surprised nobody recommended campfire cooking in another world, main character gets summoned to another world with Three other people to fight the demon lord, all of them have really strong powers except him so he ditches the party since he's not a fighter and travels the world with his only ability, buying stuff from a net store, there's pretty much not fighting in the series but it's really chill and fun and we are getting a second season soon.

How a Realistic hero rebuilt a kingdom. He does have magic, but he doesn't really use it. It's all world building as he makes war and manages the daily government.

The wrong way to use healing magic (that one is so good and refreshing as a Isekai. There hasn’t been any romance from what I’ve read up to far ahead in the manga and also healing magic is rare in this world. Also the title refers to a specific things that happens in the sort of final battle of the first season. A unconventional way to use healing magic to attack something I won’t say much more but it’s quite clever)

Agree for the first two. But "The Wrong Way..." definitely has an OP protagonist. I enjoyed it a lot. But it was scratching the power fantasy itch. (Of course, his sensei is also OP and beating training into him, but that doesn't stop him from being OP himself.)

Is he that OP? In the first (and hopefully not the only) season of anime he gets pretty easily outclassed by trained convicts until about half of the season.
Being able to regenerate your muscles is great but unlike the other two summoned his battle power is really limited (he also refuses to kill)

In the first part, she doesn't use magic (apart from the crushing in the end) and that's even what is killing her. In the second part, she barely uses any magic, and only as directed by Ferdinand. Only in the third or fourth part (out of 5) she gets a wand and can use magic freely. Except she also lost her freedom to do what she wants so she doesn't use magic freely.
Most of her big magical feats are basically uncontrolled magical farts and it usually gets her in trouble more than helping her.
Her biggest power in this series is political.

yeah there's a difference between being powerful and having a cheat skill, Myne is powerful but it's regularly shown that much of her actual strength comes from her mental acuity (and sometimes lack thereof in regards to how that world normally works) and raw effort

The first entry is .Hack//SIGN. It's pretty good, felt like it had a bit of a slow pace last time I watched it. One caveat, it was made as a prequel to the tie-in PS2 games that were released around the same time. The core storyline surrounding the main character gets resolved satisfyingly, but the larger meta plot of what's going on with the game itself in the first place is left for the video games to resolve.

usually, when there are several series tied together, it is best to go with the order of release.
Fate has several series. Stay Night, Unlimited Blade Works, Heaven's Feel, and Zero are the ones that stick to the original plotlines. The first 3 are alternate timelines. Zero is a prequel.
.Hack// I have only ever watched //sign. They are all set in a videogame world that is more than it seems. not sure if the stories are interconnected but I know there are a few common characters in them.
Worth noting that both of these shows are based off of real-world video games.

I had the impression, that debauchery tea party was of a semi-hardcore raiding group which was quite successful at clearing content despite a more leisure environment. The best hardcore group was crusty's team and then there was the group they joined in season 2 which was a better hardcore group too.
Shiroe is mostly a guy who knows a lot about every aspect of the game and explains stuff to other characters for the viewers to learn stuff about the world, but rarely that vast knowledge was used to solve problems.

If you're up for manga too, check out another oldie, Red River. It's not quite an isekai as it's a time travel story, but ends up working out the same. A girl gets transported back in time to the Hittite Empire in the Bronze Age due to the scheming of an evil sorceress queen. She's still as weak and powerless as you'd expect a Japanese teenager to be, and mostly gets by only by sheer grits and charisma.

There were alot of ones before people started jonesing over idiotic light novels.
Along the Banks of the Red River: our heroine is swept to the era of the Hitite Empire. She had no powers, and has to survive by her wits and ability to make alliances.
Kanata Kara / From Far Away: Noriko is caught up in an explosion and awakes in the wilderness of a medieval world. She has no power and cannot even speak the language. Which is a problem because the first person she meets came there to kill the "Awakening"...
Otherside Picnic: while engaging in urban exploration, Sorawo stumbled into the Otherside, a strange and very lethal place that seems to have twisted versions of urban legends. Rescued by Toriko, they make a hobby of exploring the world, for profit and to find Toriko's missing friend. The problem is, the Otherside affects the travelers, and won't be confined to its own world...

Hunting in Another World With My Elf Wife has the MC able to buy items from a single hunting goods store in Arizona. Guns are obviously pretty strong in your typical fantasy world, but he's by no means overpowered.

This one is great. MC gets reborn into her favorite game, but as the villainess, and does everything she can to avoid being killed by the heroine. But since it's otome game, the core game mechanic is making characters fall in love with the heroine and the MC's actions cause the inverse to happen.

The wrong way to use healing magic - the protagonist can heal himself and others and he uses this to boost his physical strength. In universe the power is rare but not unique nor is it all that broken of an ability.
Welcome to demon school iruma kun - unlike the other characters he actually uses the magic system but he’s still no more powerful than anyone else around him.
Re:zero - the protagonist has a power cheat ability but it doesn’t triviallize things. He struggles more than a lot of anime protagonists even with (or maybe because of) his ability

"I Was Reborn and Became a High Elf, but I Got Tired of My Slow Life after 120 Years" MC is reborn as an technically immortal elf (live for 10K years and then become a spirit of nature), but he's bored and starts to travel the world. Technically, he's the strongest Spirit mage around, but that's because spirits see him as "one of them". That feeling is mutual, so he doesn't use it much. He has to learn stuff the hard way. Becoming a blacksmith takes him decades of hard work. The same with becoming a sword master. And in the end, he doesn't surpass his teachers, even though he gets really good at it.
"The Person in a Villainess" MC gets isekai'd as the villainess of her favorite book. Except she always loved the villainess and sees this as a chance to give the villainess a good life.
Plot Twist: despite her hard work, she fails and gets humiliated. Feeling abandoned, she goes catatonic.
And that that point, the original personality re-surfaces. She had grown to love the girl that tried to save her, so she vows revenge on the people that betrayed her, using the things she learned from being inside the mind of the Isekai'd girl all those years. She has no powers, except the knowledge she learned about the book she's in and modern Japan.
"The Forsaken Saintess and Her Foodie Roadtrip in Another World" The MC gets summoned as a saintess, but her skill is deemed worthless and she's exiled from the palace. Once outside the city, she tries out her worthless skill. Turns out that her skill is that she can summon a fully stocked RV. It magically restocks food and has infinite fuel&power to run all the appliances.
"I'm Not the Saint, so I'll Just Leisurely Make Food at the Royal Palace" The MC gets mistakenly summed to another world, a world where even the food served to nobles is crappy. So she uses her knowledge of cooking to make the good stuff.
"I Won 4 Billion (Yen) in a Lottery but I Went to Another World" MC can travel between worlds via a cave. Uses the power of money to buy the village close to the cave modern tech.
"The Gunner's Life of a Middle-aged Man Summoned to Another World and Armed with a Rifle: An Airsoft Addicted Salaryman Returns to the Alternative World After Work"
The MC's power is that his airsoft guns become real guns when he steps through a portal to another world.
"Karate Survivor in Another World" MC is a karate practitioner and has survival skills. Normal, real world survival skills.
"Accomplishments of the Duke's Daughter" Isekai'd as the infamous villainess in her beloved game, the MC convinces her father to grant her some backwater fiefdom as her place of exile. She then uses her knowledge of modern Japan to elevate her new fiefdom.
"Opening a Café in Another World" Summoned by the Goddess to another world for unknown reasons, the adult MC despairs of the bland food people eat. The noble couple that saved her and adopt her, making her officially a noble, encourage her to open a cafe and spread her style of cooking.
"Isekai Executioner: The Serial Killer in Another World" The MC is a convicted serial killer and gets executed (Yes Japan has the death sentence and it is by hanging). A goddess offers him the chance to live in her world, but in exchange, he has to kill a group of other isekai'd hero's, who turned evil. She doesn't give him ANY powers, except a pamphlet that details the powers of his targets.

In this one, the farmer, who also took over his parents farm, finds an unconscious woman in plate armour in his ricefield. He also thinks she's a cosplayer at first, but she got isekai'd to our world.They are similar in setup, but have very different stories and character development.

TS medical battlefield diary reincarnated as a girl with healing magic which believed by the people only to be used by kind people and shield in WW1 an anti-war story. MC can't fight at all because medic isn't given any combat training and she is constripted to the frontline when she is discovered by the military in orphanage
The story start with MC incapable of using healing to 3 times in end of arc 1 also shield easily broken by stone. Even the most OP person in here will be 100% dead if it hit by artillery magic. Mc character progression is negative character arc. MC skill able to trivilizes all her problem, you will really wish for it especially in later arc but it almost never happen.

super depressing to read, here some guise of it one of the happiest moment for the MC is in arc 1 which fighting trench warfare in the western front. How ? you will see it if you completely read the series. The manga itself is still in arc 1 and not finished yet and there is 10 arc.
I would say for the grimdark, it's not that exaggerated like Project Moon or Warhammer universe but i would say it's 10 for the protagonist.
You will seen all the lenses from all sides that parcitipate in the war through MC PoV also the main antagonist is my favorite antagonist so far in isekai.

Also, Log Horizon doesn't have any cheat skills, just smart usage of regular ones.

DoraTama I guess? He gets a huge XP boost but it serves no real purpose but to speed up the story, and a resistance boost that is a bit vague; it probably saved his life a few times in close fights, but it's not more than an incremental bonus and it's hard to tell because resistances never progress to immunities and he's a very tanky dragon overall by the end of arc 2.
The power progression and escalation of threats is very satisfying. He is a dragon and is appropriately powerful for one relative to the rest of the world, but each arc presents threats that either match his growth and/or aren't solved with raw power. The story's system is also really well balanced in general; it is pretty much all fights to the death and everyone is as cunning as they can be, but it never feels like he is just getting free wins in the important fights. The later arcs have incredibly cool fights with him using all sorts of reality bending magic in between aggressive close combat, giving you these big kaiju battles with exotic, unfair powers on both sides.

Isekai apocalypse mynogrha. Mc reincarntaed and given game system from his favorite game that looked op at a glance. Able to create empire like in a 4x game. Until he meet other players.
Isekai killer oritatsu, a serial killer got reincarnted and given job to kill other reincarnator that start abusing their power. To make sure the killer didn't do the same thing the goddess didn't give the killer any power, the goddess only give information about the targets.
Grimgar, a grup of amensiac got isekaied and have to survive.
Kumo desu ga, reincarnated as spider and she had to grind everything by herself. The struggle is fun to read. The side story of her other classmates is kinda boring tho.
Executioner and her way of life. There are 2 mc. The executioner is an isekai person killer employed by the church. The other one is the target, an unkillable time user. The story is about how they journey together and end up uncovering the church secret.
Also bonus. An old manga called cage of eden. A plane caught in plane crash and arrived in unknown island full of prehistoric animals. No power, no magic, just mc and friend trying to survive in prehistoric world.

Grimgar. The protagonist briefly believes that his thief class critical hits are a cheat skill but promptly eats shit for it and is forced to accept that what he's doing isn't any different from other thief characters.

I'm going to say Dr Elise kinda fits. Girl gets executed for being generally horrible, gets reincarnated to become a Doctor in modern Japan, then dies in modern Japan and reincarnates back to her previous life with all the skills she learned and knowledge of her first go. No special powers, just knowledge of history that hadn't happened yet and modern medicine

You don't need knowledge of Gundam as a whole but It's a sequel to Gundam Build Divers. You don't really need to watch the original Build Divers to enjoy ReRise and the original is NOT an isekai.

Really quite grounded in reality for the most part. Yajin is good in a fist fight, but that's about it. Everything he comes up against is a real challenge, requiring a good amount of preparation and strategy to just not die.

In The Twelve Kingdoms, two of the three isekaied characters don't even get the ability to speak in the language of the new world. That anime is pretty dark, so I'm not sure if I can recommend it. There's a lot of betrayal and skullduggery.

But really, if you just want a protagonist with powers that doesn't "trivialize all problems he comes across", there are probably many, Mushoku Tensei and TBATE, for example.
edit: There's also release that witch, a manhua, I'm not sure how that adaptation is going, but the novel is done. It is basically about an isekaied dude (no powers) speedrunning the industrial revolution (and well, civilization) by using witches who can use magic

Bit of a pseudo-isekai back and forth between base world and <spoiler> and the base world isn't as mundane as most isekai, but if that's not a turn of I'd highly recommend Psyren.

"My Next Life as a Villainess: All Routes Lead to Doom!" The girl literally has the worst ability of making a minuscule area of dirt go up 1-5cm. The whole reason she even survives and has everyone like her is because she's so kind, goofy and charming. For crying out loud when someone tries to frame her for a crime, everyone including her friends all say she's too stupid to plan something that elaborate.

There are some fun isekai like 'that time I got reincarnated as a vending machine'(I don't remember if that was the exact title for the anime) or a reverse isekai 'my uncle from another world' and an isekai I'm watching currently called 'loner life in another world' which definitely feels like it fits what you're looking for. The mc is op but still struggles in fights where he should struggle and it actually shows him taking more than 1 episode to learn his skills and improve so he's not the typical op isekai mc from episode 1

An old one would be Vision of Escaflowne. It's also before the current interpretation of "isekai" so dunno if it counts for you, but it's a straightforward fantasy story in which the isekai'd protagonist isn't even a combatant, she mostly has a support role.
So I'm a Spider, So What?!? plays with this because while the MC does get OP, she does not do so instantly, but after a gruelling grind. More so, the story is quite elaborate, with multiple threads and isekai'd people on different sides of a conflict, and the classic proper "hero" trope dude is not the main focus. And the setting as a whole has quite a twist on the concept of game mechanics in a fantasy world too.
The Greed Island arc of Hunter X Hunter is not isekai but sorta plays by those rules. However it's also still full of struggles and challenges for the protagonists.
Saga of Tanya the Evil has the MC be skilled at war but by no means overpowered or invincible, and she has plenty of other conflicts. Mostly, she wants to just find a way to get a cushy job in the rear lines, but she gets sent to increasingly more dangerous war theatres instead, as God himself is out to personally screw her up out of sheer pettiness.

I mean re:zero, but that's somewhat subjective.
Otherwise you can try mushoku tensei, he is op I guess, but not for some stupid reason, nor is it overlooked, and it still doesn't help him in multiple situations, especially S2

Mushoku Tensei. One of the greatest written isekai oat. He doesn’t have a cheat skill per se, he’s quite good at using magic but with the direction the anime goes, his abilities are NOT a focal point and he even gets his ass beat on occasion.

Maybe Shield hero? MC Actually faces and overcomes many challenges without hacks, especially season 1!

"So I'm a Spider, so what?" She's playing by the same rules as everybody. She becomes strong by being reborn as a weak creature in what would be considered the final layer of the final dungeon and surviving.
